Chapter One · 起源
The Grand Houses
of Guangdong
In the great seafood palaces of Guangdong and Hong Kong, dining is theater. Tanks line the walls like living galleries; carts of bamboo steamers thread between round tables; and the kitchen speaks a language of fire — wok hei, the breath of the wok, seared into every dish.
Canton Harbor was founded to carry that theater across the ocean, complete and uncompromised: the morning tanks, the hand-folded dim sum, the tableside carving, the endless pots of tea. Not an interpretation of Cantonese dining — the thing itself.
Chapter Two · 匠心
Craft, Every
Morning
Our kitchen begins before sunrise. The tanks are stocked with live lobster and the day's catch. The dim sum brigade rolls, fills, and pleats by hand — har gow skins stretched until translucent, siu mai packed and crowned, custard buns proofed until they cloud.
By the time the first steamers hit the tables at weekend brunch, hundreds of pieces have been folded the way they have been for generations — no shortcuts, no freezer, no compromise.

Chapter Three · 落戶
Landing in
Hunters Point
We chose Long Island City for the same reason ships choose a harbor: the water, the light, and the people. Steps from Gantry Plaza State Park and minutes from the 7 train, our corner of 51st Avenue sits where the neighborhood gathers — and where a true Cantonese seafood house was long overdue.
The dining room was rebuilt top to bottom: a soaring open floor for family tables and lazy susans, and upstairs, a private suite with karaoke for the celebrations that Cantonese banquets were made for. Welcome in. 歡迎光臨.
